Tamaki Intermediate Year 7 - Savoury muffins

This week we made savoury muffins. It was interesting because besides the basic muffin ingredients, we had to choose suitable ingredients that gave colour and flavour to our muffins. Our group chose bacon and cheese. Below is the recipe for our Bacon and cheese muffins.

Ingredients
1 cup flour
1tsp baking powder
1/3 cup oil
1/2 cup milk
1 egg
1/4 cup shredded bacon
1/4 cup grated cheese

Method
Sift the flour and baking powder into a large bowl and make a hollow in the centre.
In another bowl combine oil, milk and egg and whisk together well.
Pour egg mixture into the hollow in the dry ingredients. Add bacon and gently mix until just combined. (Do not overmix or muffins will be tough)
Place tablespoonfuls in the muffin pans and sprinkle with grated cheese. bake in oven for 12-15 minutes.
Remove from heat oven and cool on a wire rack.

Variations
baked beans
sweetcorn
ham
